Vinification: the grapes arrive intact in the cellar where they are destemmed and crushed and left to ferment for about 10 days in open wooden vats. The alcoholic fermentation takes place by the indigenous yeasts. This is followed by a pause on the skins of about 3-4 weeks. The malolactic fermentation is spontaneous. No clarifying or stabilizing treatment is carried out.
Ageing: it takes place in oak barrels for about 20 months and for at least 6 months in bottle.
Colour: deep and intense ruby red
Bouquet: the broad and complex nose ranges from fresh hints of ripe red fruit and white peach to elegant aromas of spices and herbs.
Taste: when tasted, the wine shows great personality and a perfect aromatic taste-olfactory correspondence. The silky and enveloping tannins act as an excellent pillar for this wine of great evolutionary potential.
