Soil: loose and with an important, gravelly skeleton
Harvesting: Manual harvesting in 10/12 Kg crates made in a single solution.
Vinification: Grape selection first in the vineyard and then on a vibrating table in the cellar, destemming, soft roller crushing, very short cold maceration with dry ice and subsequent fermentation with low sulphur dioxide content at controlled temperature. Permanence on fine lees for 6 months
Refinement: 3 months in bottle
Colour: straw yellow and bright
Bouquet: intense and "almost" aromatic with fruity hints of ripe peach, melon, and then opens to chamomile flowers and small notes of sage.
Taste: soft and warm on the bottom of excellent freshness and persistent flavor, then the opening towards a crunchy bite of ripe yellow fruit, the long and soft finish is extremely balanced and harmonious
